Fat cannot be emulsified and disposed of without the bile. This bile is stored in the holding sack under the liver, which is the gallbladder. Without this organ the bile would move directly from your liver to the small intestine via the common bile duct and this can have negative repercussions your digestive system, one of which is irritation in the duodenum. This is exactly what happens when the gallbladder is surgically removed. The bile is condensed in the gallbladder where it is stored it for later use. The bile coming directly from the liver is not be as strong enough.
